Patch release. Version bump to 1.2.1 across manifests + version.env, with the 1.2.1 changelog entry.

Since 1.2.0

Release doctor passes. Tag v1.2.1 pushed after merge to trigger the signed Windows build.

Summary by CodeRabbit

  • Bug Fixes

    • The “Cost by project” list now shows the top eight projects by default, with a “Show all” option for viewing the complete list.
    • Charts remain easier to access without long project lists pushing them below the fold.
  • Release

    • Updated the application to version 1.2.1.

Patch: collapse the long Cost by project list behind a Show all toggle (#69)
so it no longer buries the charts. Version bump across manifests + version.env.
