Clean up changelog: drop consolidated 1.0.0 release-candidate sections

The 1.0.0-rc.1/rc.2/rc.3 entries were interim pre-releases whose notes are already captured in the stable 1.0.0 section. Removing them so the top of the changelog reads 1.1.0 -> 1.0.0 -> 0.43.3 without release-candidate clutter. Docs-only.
