Version bump and changelog for beta.5. Replaces #5, which closed itself when its branch was rebased.

What it releases, both already on main:

• fix: give plyr its translated labels again #3 — video and audio controls are translated again. They have read in English in every published beta so far, whatever language the user runs in, which is the reason to release rather than wait.
• ci: fail the build when importing the package stops being cheap #4 — the size guard, and the two dependencies the fileinfo removal orphaned.

Nothing publishes on merge. The npm workflow fires when a release is published, and the beta.5 release is still a draft — promoting it is yours to do when you want it out.

The server PR resolves beta.4 today, so it wants repointing once this is released.
