Add Gem Wallet mainnet metadata

Summary

Adds Gem Wallet to the Monad protocols metadata under Infra::Wallet.

Gem Wallet supports Monad and we would also like this metadata to help with inclusion on the Monad Software Wallets documentation page:

Notes

No Monad contract addresses are included because Gem Wallet is wallet infrastructure rather than an onchain protocol deployment.

Validation

Ran:

python scripts/validate_protocol.py --network mainnet --protocol gem_wallet
python scripts/validate_protocol.py --network mainnet

Both completed successfully. The validator reports the expected warning that gem_wallet.jsonc has an empty address map.

This PR is a small Infra::Wallet metadata addition for Gem Wallet, and local validation passes with only the expected empty address map warning for wallet infrastructure.
