Adds a short paragraph to the infrastructure page noting that setting
METAFLOW_S3_ENDPOINT_URLpoints the datastore at any S3-compatible object store instead of Amazon S3, next to the existing mention of running the stack on-premise with MinIO. The example uses a placeholder endpoint.
