fix(docker): align bridge Nacos identities

Fixes Docker development configuration drift that made bridge services register under the wrong application name or miss bridge Kafka consumer settings. Keeps all local bridge processes pointed at the compose concentrator.

Validation:

• scripts/test-docker-compose-dev.sh
• targeted Maven print regression: 85 tests
• smart-ui: 630 tests
• smart-print-renderer: 46 tests
• smart-app: 100 tests
• smart-h5: 239 tests
• smart-print-client .NET tests
