Charts and documentation use both `us-east-1` and `us-east1` (missing hyphen before the 1)

Dear maintainers,

there are several places in the documentation and the helm charts, where the region is mentioned. Some of them use the region us-east-1, some of them use us-east1. The difference is subtle, there is a missing hyphen before the 1 in the latter.

Would be nice to fix all occurrences to use the same value, as this is hard to spot during debugging (cannot find region us-east1)...
